Made from the brine used to make umeboshi, which are pickled Japanese plums with salt, this organic plum vinegar adds flavor to food without any calories. But, unlike other vinegars, it's also high in sodium. Umeboshi vinegar is used widely in Japanese cooking as a seasoning. It can be tossed with steamed vegetables and sprinkled over sautéed greens and rice or used in salad dressing, marinades, dips and pickle recipes. The vinegar is salty, with a sour, fruity flavor.
This umeboshi vinegar is certified organic by ECOCERT/JAS. It is made with organic plums cultivated in Tanabe, Wakayama prefecture, Japan.
